Apple Pancakes

Looking for a weekend morning breakfast idea? This Apple Pancake recipe will fit the bill. Not only is it delicious, but also healthy. Plus, as an added bonus it is quick to whip up. You can also enjoy them for dinner, if you are looking for a quick, healthy and delish meal that can be made in less than 30 minutes.


Ingredients

Scale
  • 1 1/2 cups plain yogurt
  • 3/4 cup rolled oats
  • 1/2 cup milk
  • 1 egg
  • 1 tbsp maple syrup
  • 2 apples, peeled and finely chopped
  • 1 1/4 cup whole wheat flour
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder

Instructions

  1. In a large bowl mix together the yogurt, oats, milk, egg and syrup.
  2. Add the apple, whole wheat flour, cinnamon, baking soda and baking powder. Mix it all together well.
  3. Heat a large skillet to medium high heat.
  4. Use 1 tsp of butter for each pancake.
  5. Pour 2 tbsp of batter into the skillet, or more depending on your preferred size of pancake.
  6. Repeat until the batter is gone, keeping the cooked pancakes in the oven at 250 F to stay warm.
