It’s that time of year again – time to talk turkey or ham. Let’s face it – there is always leftovers, leaving us questioning how to use them. This recipe is one way to enjoy turkey or ham one more time as it is simple and tasty!

Holiday Leftover Frittata

Ingredients

Scale

Pulled turkey or ham

3 eggs

¼ cup cream

1 sprig thyme, chopped

1 sprig rosemary, chopped

1 onion, chopped

½ each red and green bell pepper

½ cup leftover potatoes

¼ cup of your favourite grated cheese

Instructions

  1. Preheat broiler.
  2. Heat oil in a large non-stick oven proof skillet over medium high heat. Add onion and bell pepper and cook for 3 minutes. Stir in potatoes and cook until golden brown. Add cooked leftover meat and toss to coat.
  3. In a mixing bowl beat together the eggs and cream and season with salt and pepper.
  4. Pour egg mixture into skillet and stir in chopped herbs. Top with grated cheese and brown under broiler for about 2 to 3 minutes until the frittata puffs.
  5. Serve hot.

Notes

*You can substitute the turkey with leftover ham
