Lentil Chili

Ingredients for Lentil Chili:

  • 4 Cups Soaked Lentils (or canned)
  • 2 Cans Diced Tomatoes
  • 2 Tbsp Olive Oil
  • 1 Onion, Diced
  • 1 Yellow Pepper, Diced
  • 1 Orange Pepper, Diced
  • 3 Garlic Cloves, Minced
  • 3 Tbsp Chilli Powder
  • 1 Tbsp Cumin
  • Salt and Pepper

 

Directions for Lentil Chili:

  1. Heat olive oil in pot and sauté Peppers and Onions, adding Garlic halfway through,
  2. Add remaining ingredients,
  3. Simmer for 1 hour,
  4. Serve, Eat Well, and Be Happy

 

For Lettuce Wraps;

The best lettuce to use for lettuce wraps is Boston lettuce, yet you can really use most any lettuce.  You can use you favorite wrap ingredients such as;

  • Avocado / Guacamole,
  • Tomato / Pico,
  • Red onions,
  • Corn
  • Cheese
  • Sour Cream
  • Salsa
  • Jalapenos
