Lentil Chili
Ingredients for Lentil Chili:
- 4 Cups Soaked Lentils (or canned)
- 2 Cans Diced Tomatoes
- 2 Tbsp Olive Oil
- 1 Onion, Diced
- 1 Yellow Pepper, Diced
- 1 Orange Pepper, Diced
- 3 Garlic Cloves, Minced
- 3 Tbsp Chilli Powder
- 1 Tbsp Cumin
- Salt and Pepper
Directions for Lentil Chili:
- Heat olive oil in pot and sauté Peppers and Onions, adding Garlic halfway through,
- Add remaining ingredients,
- Simmer for 1 hour,
- Serve, Eat Well, and Be Happy
For Lettuce Wraps;
The best lettuce to use for lettuce wraps is Boston lettuce, yet you can really use most any lettuce. You can use you favorite wrap ingredients such as;
- Avocado / Guacamole,
- Tomato / Pico,
- Red onions,
- Corn
- Cheese
- Sour Cream
- Salsa
- Jalapenos
