This is a great weekend lunch idea or serve for dinner. The best lettuce for Lentil Chili Lettuce wraps is Boston lettuce, yet you can really use almost any lettuce. For the wrap, use your favourite wrap ingredients: avocado, guacamole, tomato, pico gala, red onions, corn, cheese, sour cream, salsa and/or jalapenos. The best lettuce to use for lettuce wraps is Boston lettuce, yet you can really use almost any lettuce. You can use your favourite wrap ingredients. You could also use plain wraps if you like.

Ingredients for Lentil Chili:

  • 4 Cups Soaked Lentils (or canned)
  • 2 Cans Diced Tomatoes
  • 2 Tbsp Olive Oil
  • 1 Onion, Diced
  • 1 Yellow Pepper, Diced
  • 1 Orange Pepper, Diced
  • 3 Garlic Cloves, Minced
  • 3 Tbsp Chilli Powder
  • 1 Tbsp Cumin
  • Salt and Pepper

Toppings:

  • Avocado / Guacamole,
  • Tomato / Pico,
  • Red onions,
  • Corn
  • Cheese
  • Sour Cream
  • Salsa
  • Jalapenos

Instructions

  1. Heat olive oil in a pot and sauté peppers and onions, adding garlic halfway through,
  2. Add remaining ingredients,
  3. Simmer for 1 hour,
  4. While chili simmers, prepare toppings. Wash lettuce. Slice avocados or make guacomole. Slice red onions, and/or grate cheese.
  5. When chili is ready, prepare lettuce to make wraps. Add chili and desired toppings. Wrap.
  6. Serve, Eat Well, and Be Happy!
