Sweet Potato Carrot Thai Soup

With fall here and winter on the horizon, there is nothing better than a bowl of homemade soup to warm the body and soul. We have gathered five harvest favourites. When making soups, one of the most crucial ingredients is the stock. You can make your own, or if you are in a pinch or don’t have time, we recommended Better Than Bouillon. It comes in a variety of flavours and is also great in gravy.

This hearty, thick soup is simple and full of flavour. Serve for a large family dinner, or freeze for a quick dinner option during the week.

Ingredients

Scale

1 Tbsp olive oil

2 cups diced onions

4 garlic, minced

1 Tbsp minced ginger

2 Tbsp red curry paste

4 cups vegetable broth

4 cups peeled and diced sweet potatoes

4 cups peeled and diced carrots

½ teaspoon sea salt

1/4 teaspoon cayenne pepper

Freshly ground pepper

cilantro for topping

fresh lime juice for serving

sour cream or coconut milk for serving

Instructions

  1. In a large pot, over medium heat, add the olive oil.
  2. Add the onion, garlic, and ginger. Sauté for 5 to 6 minutes or until the onions are translucent.
  3. Stir in curry paste.
  4.  Add the broth, carrots, sweet potatoes, salt, and cayenne. Stir until combined.
  5. Bring the soup to a low boil over medium heat. Once boiling, reduce to medium-low heat. Cover and simmer for 15 to 20 minutes, until the potatoes and carrots are fork-tender.
  6. Using a hand blender, blender, or food processor, blend the mixture until smooth and creamy. Note: if using a blender, you will need to leave it a little uncovered for steam to escape.
  7. Return the soup to the pot, if you have used a food processor or blender, and season with salt and pepper. If you would like, you can thin the soup out by adding more broth. Reheat if needed.
  8. Ladle soup into bowls and top with cilantro, fresh lime juice, sour cream, or coconut milk.

OPTION: Top with a dollop of sour cream or coconut milk for extra creaminess.
