Raspberry Chocolate Chip Cookies

Raspberries and Chocolate in a cookie. Oh my!  These cookies are so delish! Who knew that combining fresh raspberries with chocolate chips in a cookie batter would be absolutely amazing?

Ingredients

1/2 cup brown sugar

1/2 sugar

1 box 5.1 Instant Vanilla Pudding Mix

2 eggs

1 tsp vanilla

2 1/2 cups flour

1 tsp baking soda

1 cup semi-sweet chocolate chips

1 cup fresh raspberries cut into quarters

Instructions

  1. Cream the butter and sugars. Add the pudding mix and mix until well blended.
  2. Add the eggs and vanilla and mix well.
  3. Add the flour and baking soda and continue mixing.
  4. Stir in the chocolate chips and then gently fold in the raspberries.
  5. Drop cookies by rounded teaspoon onto a greased cookie sheet.
  6. Bake for about 10 minutes at 350F. Check the bottoms of the cookies, if they are light brown, remove them from the oven. If they are not fully baked, give them a few more minutes.
  7. Enjoy!

Notes

NOTE: Gently fold in the raspberries so they don’t break up too much.
