Grilled Chicken Kabobs

It’s “grill time.” Nothing tastes better than a meal cooked over a grill! So here is a great way to shish your meal up with shish kebobs! They are a sure crowd-pleaser or great for your family. Shishka bobs are easy and simple.

You can grill whatever you like: shrimp, beef, chicken. When it comes to veggies – the garden is the limit. You can grill zucchini, peppers, tiny tomatoes, red onion, mushrooms, egg plant, etc. You can also have all the items cut up and have your family make their very own shish kabob!

One tip is if you are making a lot – stick with one item (meat or veggie) per skewer. This makes grilling easier by cooking the meat and veggies on separate skewers, as some items need more time over the grill than others! Serve with a salad and noodles or rice if you like!

Ingredients

Scale
  • 4 boneless skinless chicken breasts
  • 4 red/green peppers
  • 8 button mushrooms
  • 1 large red onion

Instructions

1. Dice chicken into small cubes. Season with oil, salt, and pepper, and set aside.
2. Dice peppers and onions to approximately the same size as chicken.
3. Rinse mushrooms and dry.
4. Coat the vegetables in oil, and salt and pepper to taste.
5. Alternately add the chicken and veggies to the skewer, ending with a mushroom on top.
6. Preheat your grill on high, turn temperature to medium before placing the skewers on the grill.
7. Cook for 5-7 minutes on each side, turning once. Ensure chicken is cooked to an internal of 180 degrees.
