Crunchy Carmel Corn

A simple and satisfying snack to munch on while playing games with your family – even if it is virtually this year. Caramel Corn is also a great snack to gift to friends and family.

Ingredients

Scale

14 cups plain popcorn (popped)

1 cup cashews

1 cup almonds

2/3 cup brown sugar

1/4 cup light corn syrup

½ tsp salt

½ cup butter or margarine

1/4 tsp baking soda

½ tsp vanilla extract

Instructions

  1. Make popcorn. Once popped, place popcorn and cashews in two shallow, greased baking pans. You can use a roasting pan or baking sheet. Set aside.
  2. Preheat oven to 250 F.
  3. Combine brown sugar, corn syrup, butter, and salt in saucepan. Bring to boil over medium heat. Stir gently to blend.
  4. When mixture begins to boil, boil for five minutes, stirring constantly.
  5. Remove from heat, and stir in baking soda and vanilla. The caramel sauce will be light and foamy. Pour immediately over the popcorn and stir to coat. It may not be easy to mix completely at this point.
  6. Bake for 1 hour, stirring every 15 minutes. Line counter with waxed paper. Once baked, dump the corn out onto the waxed paper and separate in to pieces.
  7. Allow caramel corn to cool completely, and store in an airtight container or resealable bag.
