Speared Caprese

Impress your patio guests with this delicious appetizer. Caprese salad is one of my favourite salad recipes, and this is my take on the appetizer version. This mouth-watering appy also adds colour and a touch of elegance to your culinary patio spread.

Ingredients

Scale

1 pint cherry tomatoes
2 c fresh basil
2 c bocconcini (small size)
½ c raspberry balsamic vinegar

Instructions

  1. Skewer a tomato, basil, bocconcini, and basil leaf on a spear.
  2. Refrigerate until ready to serve.
  3. Just before serving, drizzle with raspberry balsamic reduction.
  4. Sprinkle with feta cheese.
    YUM!

Make your own raspberry balsamic reduction:

  1. Heat the balsamic in a small saucepan until it starts to simmer.
  2. Reduce heat to low for 5-7 minutes.
  3. Test your balsamic reduction.
  4. Place a spoon in the reduction to test. The liquid should evenly coat the spoon and have the viscosity of honey.
  5. Use a fork to drizzle on the caprese spears.
