Ingredients

Scale
  • 2 large onions, thinly sliced
  • 4 garlic cloves
  • 1 eggplant
  • 2 small zucchini
  • 3 potatoes
  • 1 red pepper
  • 1 green pepper
  • 2 large tomatoes
  • tomato bouillon
  • salt and pepper
  • sunflower oil
  • fresh Italian parsley
  • Polenta (Mămăligă)

Instructions

  1. Fry the onion until golden.
  2. Chop all the vegetables, except the tomatoes, and add them into the Crock Pot. Then add the fried onions, salt, pepper, oil, and stir them all together. Turn on the Crock Pot for two hours at low temperature.
  3. In a separate pot, boil the tomatoes whole. Once softened, peel and cut them into small pieces. Add them and the tomato bouillon into the pot together another half an hour.

Serve together with “Mămăligă” (polenta).
